Wirra Wirra’s “The Angelus” Cabernet Sauvignon 2021 is a refined expression from McLaren Vale, showcasing dark plum, cassis, and blackcurrant on the nose, supported by notes of dried herbs and cedar. On the palate, it offers medium-plus structure, with firm but polished tannins and balanced acidity delivering layers of blackberry, graphite, and subtle mint. Oak is neatly integrated—adds spice and toast without overwhelming. A poised finish carries aromas of violets and gravel. This wine pairs exceptionally well with grilled red meats, slow-cooked beef brisket, or aged cheddar. Elegantly Australian, this Cab offers depth and drinkability without overreach.
