The 2021 Yeringberg Cabernets is a stellar example of how cool-climate Cabernet in the Yarra Valley can deliver both refinement and depth. As one of Yeringberg’s signature bottlings, this is a layered, structured wine built to age and to reward patient cellaring.
On the nose, you’ll find aromas of blackcurrant, cedar, tobacco leaf and graphite, intertwined with hints of peppercorn, menthol and wild herbs. In the glass, the wine is dark garnet with a youthful purple rim. The palate is precise and focused: black cherry, cassis, dark plum ride over fine-grained tannins and a subtle stroking of oak. Tension and freshness carry the wine through to a poised finish.
Although powerful, it never loses Yeringberg’s signature elegance. The oak (seasoned French) is supportive, not intrusive. The fruit and structure dominate, with the oak in a supporting role.
