A pure Chardonnay sparkler from Tasmania’s Derwent Valley, this wine is made using the traditional method and aged five years on lees with an additional year under cork before release. Aromas of lemon curd, green apple, and honeysuckle lead into layers of butter pastry, almond, and subtle brioche. The palate is crisp and tightly wound, with citrus and custard apple wrapped in a creamy texture and finishing long with chalky minerality and a touch of salted caramel. At 12% alcohol, it’s elegant and refreshing. Pairs well with oysters, tempura prawns, or triple-cream Brie. A refined Blanc de Blanc with both texture and tension, ready to drink now or cellar for another 4–6 years.
